This recipe is just in time for Halloween! This candy corned colored sugar cookie sandwich has a rich filling of no bake cheesecake and a hint of International Delights Sugar Cookie Creamer! I always test my recipes on my kids and this one got a mixed review. Two of them loved it. The other one, said it was too creamy! So there’s my disclaimer:0)
These goodies starts with you favorite sugar cookie recipe. Make sure half of it is orange and half is yellow for the candy corned look! You can also use store bought cookies from the bakery. I think they would taste amazing! I love sugary sugar cookies:0) The key to holding it all together is to make sure your cookies aren’t to delicate. Also make sure they are completely cool before adding any cheesecake.
[line] The key to perfect sugar cookie form is to roll out your dough on to parchment paper and then freeze it for 15-20 minutes. Immediately cut and bake in the oven at instructed temperature. [line]
Beat the softened cream cheesesugar, vanilla and creamer on medium speed until smooth and creamy.
Add cool whip and beat until creamy
Refrigerate for 3 hours or until firm.
Take your cooled sugar cookie and pipe a small amount of cheesecake onto the cookie. Top it off with another cookie. Repeat until all sandwiches are complete.
Serve immediately. Store leftovers in fridge.
*Store bought sugar cookie dough seems to spread even after placing it in the freezer
Hope you guys enjoy this recipe!
