We seem to have a little of banana theme going on lately. Yes, I’ve been on a banana kick for sure. Just like when I get on my lemon kicks and make all the things. But in my house there always seems to be some old, lingering banana in the kitchen that need some attention. Hence, fluffy banana pancakes recipe…but with pancake mix.

This one I remembered the other day. I use to make the when the kids were little. I don’t hide the fact that most of the mornings as the kids were growing up I made them oatmeal. It was quick and easy and so efficient and you could make it different everyday with mix-ins!
But there were those 1% mornings when I had a few extra minutes and made pancakes and then those rare mornings during the week when I had a bit more time and threw in some bananas to the mix. You see my point right? I needed something fast and quick and still some what semi-homemade and these banana pancakes, all though made with pancake mix were always a hit!

I used a pancake mix that only adds water ( Krusteaz is great) and added bananas to it for a delicious and moist pancake breakfast. For even more flavor I added cinnamon and vanilla! Soooo good.

How to Make Banana Pancakes (Step-by-Step)
To make homemade banana pancakes, you’ll need to get out a mixing bowl and all your ingredients. You can skip to the recipe or you can follow along with pictures.
- Heat up griddle to 350º
- In a mixing bowl, mash or blend 2 bananas until well combined. ( I used a cordless hand mixer)
- Add in pancake mix, vanilla, and cinnamon. Mix until all ingredients are combined.
- Add in 1/3 cup of water. Use more water until the consistency is thick but not watery.
- Add 2 tbsp. of butter or oil to the griddle. Spread it out to cover the griddle
- Add pancakes onto the griddle forming, 6 small 4-inch pancakes.
- Flip once bubbles start forming on top and the edges start to crisp.
- Cook for another 3-5 minutes.
- Serve hot with maple syrup!

- Keep all your pancakes warm in a pancake warmer while you make batch after batch! You can wait until they cool and wrap them up and freeze them for later, making your mornings even simpler.
- You can mash bananas as they get older and freeze them up to 3 months into the freezer. Let me defrost in the fridge overnight and your bananas are ready to use the next morning.
- Banana can make a dish pretty dense. So I like using buttermilk pancake mix. If you let the batter sit 10-15 minutes it helps produce a taller fluffier pancake!

Why are my banana pancakes soggy?
Sometimes if you add too much banana or water you pancakes can be soggy. You can fix it by adding a few tablespoons of pancake mix to the batter until it thickens up again. It can also be caused by low heat. So make sure the griddle is at least 350 degrees.
Cinnamon in this recipe is completely option but I do find that it gives the pancakes just a little depth when it comes to taste.
