Mini Beef Tostadas

Ingredients
  

  • 1 lb Ground Beef Cooked and Seasoned (with taco seasoning)
  • 1 can Refried Beans
  • 1/2 cup Colby Mixed Cheese
  • 1/4 cup Sour Cream
  • 1/2 cup Red Onion Finely Chopped
  • 1/2 cup Green Onion Finely Chopped
  • 1 cup Tomatoes Diced
  • 1/2 cup Cilantro Loosely Choped
  • 27- 3 in small Tortillas
  • 1 1/2 cup Vegetable Oil

Instructions
 

  • Brown ground beef. Season with taco seasoning and set aside.
  • Use a 3 in circle cutter to cut out 27 circles from white corn tortillas. Set aside.
  • Heat 1.5 cups of vegetable oil and begin to cook the tortillas. Only 3-5 seconds on each side. Let it cool down on a paper towel.
  • While the tortillas are cooling, cook the refried beans on the stove until hot. Add water a teaspoon at a time to loosen it up if need. Next add cheese and the sour cream until well combined. Remove from heat.
  • Layout tortillas on a serving platter. Add a layer of refried beans, beef, cilantro, green onion, and tomatoes. Repeat until done.
  • Serve immediately.
